Onions’ self-defense mechanism releases natural chemicals and enzymes that can cause tears when injured or cut. Tear-free products contain fewer of these compounds, so in principle they do not cause irritation.

Earlier in Great Britain, so-called Sunions onions became available in Waitrose supermarkets, whose supplier promised to put an end to the tears that occur when slicing. The British tried everything in the past to avoid eye irritation when chopping onions. A well-known everyday trick is soaking and freezing onions in water, and some people swear by swimming goggles when slicing them.
